Experience Cutting-Edge Cocktails And Revolutionary Aging Techniques

Yesterday, June 18, Tocayo launched its first Terrarium Series, hosting the award-winning bartender Angelo Immorlano, winner of Best Bar Manager UAE 2023. Mr. Immorlano, with rich experience from Zuma & Nobu Dubai, using Gin Mare & Diplomatico from Xinaris, presented two innovative cocktails.

These two cocktails were added to Tocayo's refreshed cocktail menu since yesterday, and one of them will be placed for aging in Tocayo's terrarium. After 30 days of aging in this pioneering process, it will be available to the public for tasting, offering a unique flavor experience.

The Unique Aging Process in the Terrarium

If you have visited Tocayo recently, you may have noticed the impressive glass terrarium dominating the bar area. This is the terrarium, where the aging process of a cocktail takes place through an innovative and creative method.

Within the terrarium, a recyclable ecosystem is created, a microclimate where temperature, light, and humidity can be controlled, thus simulating conditions of a tropical forest.

Inside the terrarium, a 5-liter wooden barrel is placed, containing the respective cocktail. As explained by Mr. Pieros Papaioannou, Public Relations Manager of the group, 'Around the barrel, we have created a self-sustaining ecosystem, incorporating various elements of nature found in tropical forests, such as porous volcanic rocks, spider wood, and various tropical plants like ferns and java moss, using them for water filtration.'

Humidity and low temperature in the terrarium are generated with the help of a 'cold mist' system. 'This enhances humidity in the wooden barrel walls, allowing the wood to absorb all aromas from the environment and incorporate them into the alcohol.' Each cocktail remains in the wooden barrel for a period ranging from 35 to 40 days.
