The Story of Lava: The Dessert Born by Chance

It all started in Thessaloniki, specifically at the small family-owned ice cream shop Gelissimo Biscoto on Proxenou Koromila Street. The viral dessert was created by chance, as described by its creator, Steve Toumbas: "We had good vanilla and pistachio ice cream, and pistachio paste, but that was it. One day, my brother gave me pistachio praline to try, and I was so thrilled by its taste that I thought, 'Everyone must try this!' I made the first lava—the name was inspired at the moment due to the heatwave outside—posted a related video on TikTok, it got thousands of views, and the next day we saw queues outside our shop waiting to try it. I can't even explain how all this hype happened. It probably has to do with the power of social media combined with a delicious product. Since then, they've been calling me 'Lava'!" The frenzy caused by the taste of Lava among sweet lovers was such that Steve Toumbas opened a shop in Plaka (Astiggos 11) with the motto "Athens is Lava," as well as in Fira, Santorini, exciting tourists.

What Exactly Is Pistachio Lava?

It is a delicious vanilla ice cream submerged in warm pistachio praline with a distinctive bright green color, topped with crispy toppings, and served in a low glass. The mouthwatering pistachio praline can accompany pancakes, waffles, or be the main ingredient in another viral dessert currently trending on TikTok, "Dubai's Chocolate." Another version of the classic lava is Speculoos Lava, featuring cinnamon biscuit, also inspired by Steve.
