This Restaurant in Peru Crowned World’s Best Restaurant 2025

Maido’s triumph highlights Peru’s culinary innovation as Latin American gastronomy takes center stage.

Maido, a restaurant in Lima, Peru, was named the best restaurant in the world for 2025. A few weeks after the announcement of the 51–100 ranking of the world’s best restaurants, the awards ceremony for the top of the global list took place last week in Turin, Italy.

The restaurant owes its name to the word “maido,” a Japanese greeting, and is led by chef Mitsuharu “Micha” Tsumura, the son of Japanese immigrants who formally trained in the United States before returning to Lima. His cuisine blends Japanese and Peruvian gastronomic traditions — known as Nikkei — applying techniques from Osaka to Peru’s rich native ingredients. Famous dishes include subtle molecular creations such as pork with palm heart or yucca with Amazonian beans.

Maido opened in 2009 in the Miraflores district, and since 2015 — when it ranked 44th — its rise to the top spot in 2025 marks a significant overperformance. Four more restaurants from Lima — Kjolle, Mérito, and Mayta — were also included in the World’s 50 Best Restaurants list for 2025.

  3. Quintonil – Mexico City, Mexico

Asador Etxebarri in Spain claimed second place for the second consecutive year, while Mexico City’s Quintonil secured third.

Maido’s victory stands as proof of the global rise of Nikkei cuisine and the culinary creativity of Latin America, marking the second time a Peruvian restaurant has taken the top spot — the previous being Central in 2023.
